Contains Emulsifier So Cannot Separate The Cream
While the cost is great, this unfortunately contains guar gum which is an emulsifier to prevent it from separating and is unhealthy. You cannot separate the cream from the watery liquid. That makes this useless for a lot of recipes that use the cream separately from the liquid. For recipes that use the emulsified coconut milk, this will work, but I prefer to not consume emulsifiers.
